Peanut Butter Waffle Toast

Betty Crocker's picture...

And mine...

,
....yummmmmm.....

Betty Crocker is an absolute genius.  This recipe literally transforms a normal piece of bread into a waffle.  Just pour some peanut butter pancake batter over the bread, stick it in your waffle iron, and wah-la!  Waffle toast!  I did not grease my Belgian waffle maker because this makes the waffle extra crisp on the outside, and my waffle turned out big, crispy, and peanut buttery!  So delicious!  The inside is a little more dense than your average waffle because it's a piece of bread, but it's still very yummy.  I actually used an open hot dog bun as opposed to whole wheat bread, because those were my only two options and I love hot dog buns...but I'm gonna try the whole wheat bread next time I make it.  I topped mine with maple syrup, some maple butter, whipped cream, chocolate chips, and banana slices.  I guess you could say I like toppings(:  This recipe left my brain screaming with ideas about transforming more things into waffles...banana bread with this batter or chocolate/chocolate chip pancake batter, chocolate cake slices with this batter, and any other cake with any type of pancake batter around it, strawberry or blueberry bread with strawberry or blueberry pancake batter around it, or a cookie with pancake batter around it....I could go on all day!

You can find this magical recipe here.

Cinnamon Sugar Crusted PB&J

Oh my goodnessssss... peanut butter and jelly sandwiches are
love.  And while I've had many toasted before, never have I thought of giving it a cinnamon-sugar, crispy coating...until a few weeks ago.  I got the idea when I saw somebody at Bruegger's order a cinnamon sugar bagel with peanut butter and jelly, and I thought that was pure genius. This was super easy and made the classic sandwich even more amazing.   I would definitely advize you toWhen you bite into this heavenly delight, your taste buds experience a warm, rich, and gooey peanut butter and jelly mixture, but also a crispy, cinnamon sugar sweetness...causing the sandwich to be completely irresistible.  It was so good, I barely even savored the moment because I ate it so darn fast!  I would highly advise you to have a cold cup of milk handy...you'll definitely want to refresh your sticky mouth(: The picture above is the side without the cinnamon sugar, because the cinnamon sugar side didn't look too appetizing since it turned almost black...even though it wasn't burned...it was just toasted.  I promise you that it tastes way better than it looks! (But the side in the picture looks pretty, right?) The next time I make this, I'm going to try [different variations]...like peanut butter and banana, peanut butter and apple, almond butter, flutternutter...you can really take any type of nut butter sandwich and transform it into a super awesome sandwich with a cinnamon sugar crust! Yum!

Yield: 1 sandwich

Ingredients:

1/2 tablespoon white sugar
1/2 tablespoon brown sugar
1 teaspoon cinnamon
1 teaspoon butter, softened (preferably salted, but unsalted is fine too)
2 slices sandwich bread
2 tablespoons peanut butter
1 tablespoon jelly

Instructions:

Mix together the sugars and cinnamon, set aside.

Spread each slice of bread with butter, on one side. (Each slice should have about 1/2 teaspoon)

Spread peanut butter on one slice of bread (side without the butter). Spread fruit spread over peanut butter. Place the bread with the peanut butter and fruit spread on it, butter side down in the skillet.

Top with remaining slice of bread, leaving the butter side out. Sprinkle cinnamon sugar mixture over the bread.

Cook for 2 minutes or until golden brown. Flip and cook the other side until golden. If some cinnamon sugar mixture falls off, spoon it back onto the top of the sandwich.  Remove from pan, slice if desired and enjoy.

Classic Fluffernutter Sandwich

Ahh the fluffernutter.  I would take this over peanut butter and jelly any day.  This has been a favorite of mine since longer than I can remember.  But what's better than a fluffernutter?  Well..my ultimateTriple Decker Nutella Banana Fluffernutter (found here) is just as amazing...or a hot flutternutter.  It's just your classic peanut butter and marshmallow fluff sandwich, but it's nuked in the microwave for a couple seconds to get it warm and gooey and insanely delicious.  You know when you have an ice cream cone and you're standing under the sun and it melts and you have to lick it off really fast?  That's what's probably gonna happen with this sandwich after you microwave it.  The melty marshmallow and peanut butter will ooze out of the center of the sandwich...but it just makes it even more exciting to eat(:  If you've never had a flutternutter, make this sandwich. You haven't lived until you've had one.  But just a warning: you may never go back to peanut butter and jelly again.

Ingredients:
2 slices of bread (white is best)
2 tablespoons peanut butter
2-3 tablespoons marshmallow fluff (depending how sweet you like it)

Directions

  1. Spread the peanut butter onto one slice of bread. Spread the marshmallow creme onto the other slice. Place the bread topping-side-up onto a microwave-safe plate. Cook in the microwave on High for 30 seconds. Place the two halves together and serve.

Fluffernutter Monkey Bread

Original recipe:

And mine:

I got SO excited when I spotted this recipe.  Fluffernutter sandwiches are my all time favorite lunchbox sandwiches.  Have you ever heated up a fluffernutter in the microwave?  *drooling*  The marshmallow gets all melty and the peanut butter gets warm and together they're gooey and sticky and oh so delicious. And the marshmallows on top get nice and toasty..it reminded my dad of s'mores.  I seriously freaked out when I saw this recipe...I don't remember how I found it...but when I saw it I was like: OMG I have got to make this now!!  I prepared the dough last night (since I wanted it for breakfast) and after the second rise, I put it in the refrigerator overnight, and then I let it sit our for about 30 minutes before putting it in the oven.  I halved the recipe simply because I didn't wanted a huge amount of the bread, and it was the perfect amount for my mom, dad, and I. The only thing I did differently was use marshmallow fluff in the glaze instead of the mini marshmallows because I ran out.  It tasted totally fine though.  My dad loved this bread, and he doesn't even care for marshmallows or peanut butter!  I seriously ate about 3/4 of it today on my own.  I just finished another piece. Try dipping it into maple syrup! Mmmm...so good!  When I make this again, I may try adding peanut butter chips, chocolate chips, cinnamon chips, and/or a chocolate drizzle.  I think experimenting with this would be really fun!  So try it out...you won't regret it!

Easiest Peanut Butter, Chocolate, Banana Pudding

This is seriously way too easy.  It's ten times better than any banana pudding I've ever had, and it's by far the quickest and simplest to make.  The secret ingredient for this creamy and luscious dessert is overly ripe bananas. Just whizz up some frozen bananas with peanut butter and cocoa powder.  That's all there is to it.  Feel free to add other toppings as well...I often add nutella and/or whipped cream. You can even freeze the pudding for an hour and enjoy it like ice cream. Yum!

Yield: About 2-4 servings

Ingredients:
2 medium, very ripe bananas, peeled and sliced (the riper the better!)
4 tablespoons creamy peanut butter
3 tablespoons cocoa powder  (and/or nutella)

Instructions:
1. Place the banana slices on a plate lined with parchment paper.  Freeze for about 2 hours.
2.  In a food processor, combine frozen bananas, peanut butter, and cocoa powder.  Process until thick and smooth. Serve immediately.

Peanut Butter Pie

This may be my favorite pie ever.  Actually..yeah..it is my favorite pie ever.  Or maybe it's tied for first with my banana cream pie.  Whatever.  It's SO good!!! If you are a peanut butter addict - like me - then you will LOVE this pie!!! It's so dreamy, creamy and full of rich, peanut butter flavor.  It truly melts in your mouth and is totally irresistable.  It's incredibly easy to make too.  It reminds of of a cold peanut butter cup...but better...because it's in pie form. The texture is silky and fluffy - kind of like a lighter cheesecake.  I made this for a cross country party, but once I tasted it I didn't tell anyone about it because I wanted it all for myself.  I didn't have much luck though...once people started tasting it they couldn't stop!  It ended up being completely eaten and I wasn't able to take any more home.  But now it's a family favorite and I will continue making it often.

Mashed Banana Toast/Sandwiches

Do you mash or slice your bananas???

I would guess you have probably been slicing them your whole life.  Well, here's something new to try: MASH 'EM! All it does it make it creamy.  It's literally like creating your own banana spread.  Especially if the banana is really ripe...mashing a ripe banana will make it taste way better than a greenish banana (since ripe bananas have more sugar). Did you know that they sell banana peanut butter?  I don't understand why would anyone buy that when you can just make it yourself.  Anyways...instead of your usual peanut butter and sliced banana toast/sandwiches that I'm sure you've been doing for as long as you can remember, just mash the banana!  You can mix other spreads in with the banana if you want to change it up even more.

Mashed Banana Toast/Sandwich:

Ingredients:
1 slice of bread, toasted   (or 2 for a sandwich)
1/2 to 1 ripe banana (depending how big it is)

Instructions:
Mash the banana as chunky or creamy as you'd like.  Spread mashed banana on hot toast.

***Add a slice of bread on top to make a sandwich if you prefer.  Toasting is optional.

Variations:  Mix into mashed banana mixture before spreading on top of bread...

  • peanut butter
  • nutella
  • honey
  • melted chocolate chips (flavor of your choice)
  • cocoa powder
  • cinnamon
  • blueberries
  • almond butter (or other nut butter of your choice)
  • chopped or sliced strawberries
  • crushed Nilla Wafers
  • toffee bits
  • coconut flakes
  • dash of vanilla extract
  • brown sugar (this is very sweet..but delicious)
  • chopped nuts of your choice
  • grape nuts (or other cereal of your choice.  Honey Nut Cheerios and Cinnamon Toast Crunch is really good too)
  • caramel sauce
  • whipped cream
  • chocolate sauce/syrup
  • pudding
  • maple syrup
  • jelly
  • yogurt

Soft Chocolate Cookies with Fluffy Peanut Butter Frosting

Chocolate + peanut butter = the BEST combination ever invented.  Seriously..who wouldn't agree??? Last year, I wanted to make a rich chocolate/peanut butter dessert for a cross country race, so I created these cookies.  I started with a chocolate cookie: soft, chewy, slightly cakey, and pillow-like chocolatey goodness.  They taste great alone, but I like my desserts to be more over-the-top...so I added a rich, fluffy, peanut-butter frosting.  Mmm...it's lip smackin' good.  These chocolate peanut butter cookies are absolutely incredible!  This is one of the only recipes I've made that I haven't thought once about altering...it's just that perfect!  These are very rich and fudgey - mainly due to the frosting.  When you sink your teeth into this, you'll be in chocolate-peanut-butter heaven.

Yield: about 5 dozen small cookies

For the chocolate cookies:

Ingredients:

4 squares BAKER'S Unsweetened Chocolate
3/4 cup butter
2 cups sugar
3 eggs
1 tsp. vanilla
2-1/2 cups flour

Instructions:

Microwave unsweetened chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Add sugar; mix well. Blend in eggs and vanilla. Add flour; mix well. Refrigerate 1 hour or until dough is easy to handle.
Heat oven to 350°F. Shape dough into 1-inch balls; place, 2 inches apart, on baking sheets sprayed with cooking spray.
Bake 8 min. or just until set. (Do NOT overbake.) Cool on baking sheet 1 min.; remove to wire racks. Cool completely.

For the peanut butter frosting:

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup creamy peanut butter
  • 3 tablespoons milk, or as needed
  • 2 cups confectioners' sugar

Instructions:

  1. Place the butter and peanut butter into a medium bowl, and beat with an electric mixer.
  2. Gradually mix in the sugar, and when it starts to get thick, incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick and spreadable. Beat for at least 3 minutes for it to get good and fluffy.
  3. Spread on top of cooled cookies.  You can also sandwich them together if you want...but I prefer just one cookie with lots of frosting b/c it's easier to eat and you experience more peanut butter flavor.

Peanut & Apple Butter Sandwich

What's your favorite healthy snack? I can bet you apples with peanut butter is at the top of your list.  It is definitely at the top of mine. My favorite peanut butter and apple combo is a big, juicy pink lady apple sliced and dipped into Smuckers All Natural Creamy peanut butter. Mmmm...so good!  So I made this nutritious snack into a very delicious sandwich.  It's apples and peanut butter, but I also added some apple butter. The crunch from the crisp apple makes this sandwich way more exciting and appealing than your typical peanut butter sandwiches.  And if you've never had apple butter, you really should, because it's really, really good.  Especially on bread.  It has a little thinner consistency than jelly, and it's very sweet and goes perfectly with peanut butter - especially on this sandwich(:  I bet some of you are bored of your usual pb&j, so give this a try.  You won't regret it.

Ingredients:
2 slices of bread  (you can toast it if you want...I did)
2 tablespoons peanut butter (crunchy or smooth)
1-2 tablespoons apple butter (depends how sweet you like it)
about 1/4 of an apple, thinly sliced

Instructions:
1. Spread peanut butter on one slice of bread.  Spread the apple butter on the other half.
2. Place enough apple slices in one even layer on one bread slice to completely cover that bread side.
3. Place filling side of opposite slice on top of the bread slice with the apple slices, cut if desired, and enjoy.

Maple Peanut Butter Breakfast Bread Pudding

This is a peanut butter lover's paradise. It is my all-time favorite peanut butter recipe.  I am not even kidding you...I was practically drooling while eating it.  If you like peanut butter, you will absolutely LOVE this.  It is very peanut buttery - but hey, you can never have too much peanut butter in my opinion.  It's adapted from a recipe on peanutbutterlovers.com (yes, there really is such a website...and I happen to go on it often.  not obsessively or anything.) and I added the special topping to make it even more spectacular.  The topping is a sweet-and-salty mix from my nutella peanut butter pillows.  I wouldn't change anything about this recipe...it's so perfectly rich and full of delightful peanut butter flavor.  Definitely have a glass of milk at your side when you dig into this dish.  You'll be licking your lips and wanting more.

Ingredients:
1/3 cup creamy peanut butter
2 eggs
1/2 cup granulated sugar
2/3 cup milk
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon salt
4 cups cubed brioche or challah bread (cut into 3/4 inch cubes)
2/3 cup pure maple syrup
1/3 cup creamy peanut butter
1/3 cup crushed peanuts

Garnish:
1/4 cup of finely ground, roasted (regular peanuts are fine too) peanuts (run through the food processor)
1/4 cup of granulated sugar
1/2 tsp. of ground cinnamon
1/2 tsp. of sea salt

Instructions:
Preheat oven to 350 degrees. Butter four 4-ounce ramekins. Mix 1/3 cup peanut butter, eggs, sugar, milk, vanilla and salt. Toss bread cubes in mixture until thoroughly coated. Divide evenly among prepared dishes. Bake until custard is set in the middle and the top is golden, about 35-40 minutes.

Note: If tops of bread brown too quickly, cover ramekins loosely with aluminum foil.

While pudding is baking, blend 1/3 cup peanut butter with maple syrup; transfer to small saucepan and heat on low until thoroughly warmed.
To serve, drizzle ramekins with maple-peanut sauce and garnish.

*If you choose not to garnish with this topping - which you really should, powdered sugar or whipped cream is good too.

Nutella Peanut Butter Pillows

Oh yes. These really are just as good as the picture.  But I can't take credit; these wonderful pillows originated from Une Gamine dans la Cuisine.  I only altered it a little. These are so flavorful and incredibly amazing.  The outside is a peanut butter cookie with slightly crisp edges, and the inside is a soft cloud of peanut butter-nutella filling.  They're rolled in a sweet-and-salty pile of peanuts, cinnamon, and sugar.  And it's really fun to roll them...who doesn't love playing with cookie dough? ;) The slight saltiness, especially from the sea salt, makes these little master pieces have loads of flavor.  The almond extract gives it a really fantastic nut taste, as opposed to using vanilla extract. The cookie tastes like a peanut butter and Nutella sandwich only without the boring slice of bread. Imagine that instead of bread, you have a sugar cookie with a sprinkling of sea salt and cinnamon. Grab a tall glass of ice cold milk and prepare to be transported to a Nutella and peanut butter filled heaven.

Cookie Ingredients
1 cup of all-purpose flour
1/3 cup of cake flour (if you don't have cake flour, all-purpose can be substituted, but just use 1/4 cup...so a total of 1 1/4 cups all-purpose flour)
1/2 tsp. of baking Soda
3/4 tsp. of sea salt
1/2 cup ( 1 stick ) butter. At room temp.
1/2 cup of granulated sugar
1/2 cup of packed light brown sugar
1 egg
1 tsp. almond extract
1/2 cup of smooth peanut butter (crunchy is fine too, but they're more "pillow-like" with smooth)

Nutella Filling Ingredients
1/4 cup of smooth peanut butter
1/4 cup of Nutella
1/4 tsp. of sea salt
1 Tbsp. of cocoa powder
3 Tbsp. of granulated sugar
3 Tbsp. of confectioners sugar

Topping/Rolling Ingredients
1/4 cup of finely ground, roasted (regular peanuts are fine too) peanuts (run through the food processor )
1/4 cup of granulated sugar
1/2 tsp. of ground cinnamon
1/2 tsp. of sea salt

Method
In a small bowl, Sift the flours and baking soda together. Whisk in the sea salt and set aside.

In a large bowl, Cream the butter. Add the sugars and beat at medium speed for about 2-3 minutes. Add the egg and beat until well combined. Scrape down the sides of the bowl and beat in the almond extract and *peanut butter.* Add the flour mixture a little bit at a time. Be careful not to over mix. Stop beating when all the flour streaks are gone. Cover and refrigerate for an hour while you make the filling and topping.
* If you lightly grease and flour the measuring cup it will be much easier to remove the peanut butter. *

To make the Nutella filling, Combine all the ingredients and mix well. You should be able to easily roll the filling into ball forms. If it is too sticky add more confectioners sugar. Set aside until ready to use.

To make the topping, Simply mix all the ingredients into a shallow bowl and set aside.

Preheat the oven to 375F. Line cookie sheets with parchment paper.
Measure out about 2 level tablespoons of the chilled cookie dough. Roll into a ball and flatten out onto the parchment paper. Roll some of the Nutella dough into a smaller ball and place on top of the cookie dough, Press in slightly. Gently fold the cookie dough over the Nutella so it is completely covered.
Carefully roll into a ball and roll the ball into the topping so it has a nice coating. Place ball back onto the parchment paper and lightly press down with the bottom of a glass.

Place cookies about 2 inches apart. Bake for 8-10 minutes or until the edges are a light gold.

Makes about 20-28 cookies. *You can adjust the size of your cookies and use as little or as much filling as you want. Just be sure to adjust the baking time accordingly.*

Triple Decker Nutella, Banana, & Flutternutter Sandwich

who knew that one sandwich could contain.....

peanut butter...

bananas...

nutella...

AND marshmallow fluff?

Ohh yess..it truly is as good as it sounds...and as good as it looks.

Today, I created the ultimate sandwich.
peanut butter + banana + nutella + marshmallow fluff = the best sandwich in the entire universe.
Especially if you're a chocolate peanut butter fanatic - like me. You know how Elvis is famous for his peanut butter and banana sandwich? Well, I'm almost certain that I'll be famous for this sandwich in a couple years.   I'm also a huge fan of the fluffernutter (peanut butter and marshmallow fluff).  This triple decker sandwich is the fluffernutter sandwich combined with my second favorite sandwich: nutella and banana.
it just doesn't get better than that.
My lunch table was beyond jealous.

Guard this recipe [with your life]:

Ingredients:
2 slices of bread
1/2 a banana, sliced
1 tablespoon peanut butter
1 tablespoon nutella
1 tablespoon marshmallow fluff

*you can double it if you have a pretty big appetite, but most people would find half to be a pretty good size.

Instructions:
1. Cut the bread slices in half.  You will have 1 half left over that won't be needed.
2. Place the sliced bananas on one half. Spread the peanut butter over a separate half and place it against the slice with the sliced bananas, making a peanut butter and banana (half) sandwich.
3. On the top of the slice where you spread the peanut butter, spread the nutella.
4. On the 3rd bread slice, spread the marshmallow fluff.  Place this against the nutella bread slice, so that the marshmallow side goes against the nutella.

Helpful tip: to make it even more gooier, try toasting it.
