Fluffernutter Monkey Bread

Original recipe:

And mine:

I got SO excited when I spotted this recipe.  Fluffernutter sandwiches are my all time favorite lunchbox sandwiches.  Have you ever heated up a fluffernutter in the microwave?  *drooling*  The marshmallow gets all melty and the peanut butter gets warm and together they're gooey and sticky and oh so delicious. And the marshmallows on top get nice and toasty..it reminded my dad of s'mores.  I seriously freaked out when I saw this recipe...I don't remember how I found it...but when I saw it I was like: OMG I have got to make this now!!  I prepared the dough last night (since I wanted it for breakfast) and after the second rise, I put it in the refrigerator overnight, and then I let it sit our for about 30 minutes before putting it in the oven.  I halved the recipe simply because I didn't wanted a huge amount of the bread, and it was the perfect amount for my mom, dad, and I. The only thing I did differently was use marshmallow fluff in the glaze instead of the mini marshmallows because I ran out.  It tasted totally fine though.  My dad loved this bread, and he doesn't even care for marshmallows or peanut butter!  I seriously ate about 3/4 of it today on my own.  I just finished another piece. Try dipping it into maple syrup! Mmmm...so good!  When I make this again, I may try adding peanut butter chips, chocolate chips, cinnamon chips, and/or a chocolate drizzle.  I think experimenting with this would be really fun!  So try it out...you won't regret it!

S'mores Toast/Sandwich

I think this is my best toast creation yet!!! It's even better than s'mores.  It's everything you love about s'mores, but on a piece of toast.  I guess you could say it's healthier - kind of...I did make mine on whole wheat bread...and nutella is all natural, so I guess that makes it healthy, right?  Broiling the marshmallows really makes them taste exactly like they would roasting them over a fire.  The outside gets brown and slightly crispy, and the inside is warm and gooey and oh so delicious!  Just watch very closely when broiling it because it will brown really quickly.  I caught mine just in the nick of time...and I like mine pretty toasty brown.  I wasn't sure whether to use marshmallows or fluff, so I decided to use both(:  I think the fluff tasted better, but it was SO hard to put on top of the nutella/graham cracker layer smoothly, so I just ended up blobbing it on. The marshmallows browned faster than the fluff, so the toast looked kind of funny, but I'm telling you: it was the best toast I've ever had!

Ingredients:
1 slice of bread ***
1-2 tablespoons nutella
3 tablespoons graham cracker crumbs
handful of marshmallows and/or a few spoon fulls of marshmallow fluff

Instructions:
1. Set oven to broil.
2.  While oven is broiling, toast bread.  Spread nutella immediately over hot toast.  Sprinkle with graham cracker crumbs, and then marshmallows and/or plop on fluff.
3.  Place toast in a small, ungreased pan.  Broil the toast until marshmallows brown (watch closely to prevent burning because they brown very fast!)
4.  Remove toast from pan and enjoy.

*** If making a sandwich, add a piece of toast on top of the toasted marshmallows after broiling, and add another tablespoon of nutella to that slice.

Smores Pancakes

Who doesn't love s'mores?

Sitting around a warm, cozy campfire on a crisp, fall day...roasting marshmallows....and sandwiching them between 2 graham crackers...having that Hershey's chocolate bar ooze down your fingers.  Mmmm..there's nothing like it.  Especially --- with peanut butter.  In case you didn't know, I have a HUGE peanut butter obsession.   I put it on everything... especially pancakes.  But anyways, this was inspired by my s'mores cake I made a few months ago, which turned out phenomenal.  The pancakes are the #1 pancake recipe on allrecipes.com, but I substituted graham cracker crumbs for the most of the flour, and added some brown sugar.  I was nervous the graham cracker crumbs would make the pancakes too grainy, which is why I kept some of the flour.  I was also scared the marshmallows would melt or burn, but they turned out to be melt-in-your-mouth perfection.  I got the sipping chocolate at Whole Foods (a bazillion times better than that Swiss Miss junk), and decided to sprinkle it on top...oh man...it was so good.  My parents and I licked our plates clean.

Yield: 4 servings
(about 8 pancakes)

Ingredients:
3/4 cup milk
2 tablespoons white vinegar
3/4 cup graham cracker crumbs
1/4 cup all-purpose flour
2 tablespoons brown sugar
1 tablespoon white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
chocolate chips
mini marshmallows
*chipotle spice sipping chocolate (optional)
*peanut butter (optional)
*graham cracker crumbs for garnish (optional)
*whipped cream (optional)
cooking spray

Instructions:

  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
  2. Combine graham cracker crumbs, flour, sugars, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, sprinkle with marshmallows and chocolate chips (and sipping chocolate, if you have it), and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
  4. Serve with peanut butter, graham cracker crumbs, and/or whipped cream if desired.
