Best Chocolate Chip Pancakes




Chocolate chip pancakes are my absolute favorite breakfast.  It's cake..and chocolate..at breakfast time.  What could be better? These really are the best chocolate chip pancakes you will ever have. I made these for my parents one Sunday, and they both couldn't stop talking about them all day.   They are absolutely perfect!!  They are so fluffy and melt in your mouth.  They are incredible even without the syrup...you can just use maple if you'd like, but definitely try this syrup. I loved it - however, use it in small amounts because it's very rich and deliciously buttery.

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 1/2 cups milk
  • 1/4 cup vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Cinnamon Honey Syrup:
  • 1 cup honey
  • 1/2 cup butter or margarine, cubed
  • 1 teaspoon ground cinnamon

Directions:

  1. In a bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk, oil, and vanilla; add to dry ingredients and mix well.  Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Sprinkle a handful of chocolate chips on top. Turn when bubbles form on top; cook until second side is golden brown. Keep warm while making syrup.
  2. Combine the syrup ingredients in a 2-cup microwave-safe bowl. Microwave, uncovered, on high until butter is melted and syrup is hot, stirring occasionally. Serve with pancakes.
